What it's made of
Gramercy by Gütewerk. The frame and cutting deck are stainless steel; the blade is 4CR15, a steel hard enough to hold an edge and tough enough not to chip. The black plastic sits where grip and stability matter, not where cutting happens. At 42 cm long and 862 g, this is deliberately not a lightweight tool. Mass is a safety feature on a mandoline, because a slicer that shifts under pressure is a slicer that cuts you.
How it's used
Thickness is set on the side dial, across twelve settings from paper-thin to thick-cut. Thin for crisps and gratin, thick for roasting vegetables, somewhere between for cucumber salad. Two julienne settings at 4.5 and 9 mm handle fries, rösti and matchstick vegetables. Switching between cutting styles happens through the rotating blade cylinder, so your hands never approach the edge. The dial takes a few minutes to learn; once you know which number you want, you stop guessing.

Care and storage
Top-rack dishwasher safe, and the brush is included because starch lodges in the blade slots. For the longest edge life, wash by hand and dry immediately. Folded, it lies flat enough for a kitchen drawer.
Not suitable for
Very ripe soft fruit, which slips rather than slices. Firm tomatoes are fine, over-ripe ones are not. Also cooked meat, cheese harder than Parmesan, and anything frozen. Do not force dense root vegetables such as beetroot through it; steady pressure cuts, force damages. If most of what you slice is very soft, a sharp knife will serve you better than any mandoline.

Do I have to touch the blade to change the cut?
