A stainless steel mandoline that cuts ridged and waffle patterns as well as straight slices, with twenty-four settings on one rotating dial. Built for cooks who want texture on a chip or a roast potato without owning a second tool. Cut-resistant gloves, a blade guard and a food holder are in the box.
What it's made of
Gramercy by Gütewerk. Stainless steel frame and cutting deck, with a 4CR15 blade: hard enough to hold an edge, tough enough not to chip. At 839 g it sits between the compact LITE and the full-size PRO, and the non-slip feet keep it steady through the extra resistance a ridged cut creates.
How it's used
The side dial selects from twenty-four settings: straight slices from paper-thin to 9 mm, two julienne settings at 4.5 and 9 mm, and the ridged waffle blade. The rotating cylinder changes the cut without your hands going near the edge. For ridged chips, rotate the vegetable ninety degrees between passes.
What the waffle blade actually does
It produces ridged and rippled cuts: the wavy, crinkle-cut texture you want on a chip or a roast potato. It does not produce the deep open lattice of a restaurant waffle fry. The blade is not wide enough for that, and we would rather say so here than have you find out at the hob. If a full lattice is what you are after, this is not the tool.
Why we discuss safety before results
A mandoline is the sharpest tool in most kitchens, and most injuries happen during cleaning rather than slicing. Cut-resistant gloves are in the box as part of the product, not as an upsell. Wear them on both hands, including at the sink. Fit the blade guard before it goes in a drawer.
Care and storage
Top-rack dishwasher safe, and the cleaning brush is included because starch lodges in the ridges of the waffle blade more readily than on a flat one. For the longest edge life, wash by hand and dry immediately. Folds flat for a drawer.
Not suitable for
Deep lattice waffle fries, as above. Also very ripe soft fruit, cooked meat, cheese harder than Parmesan, and anything frozen. If you only ever cut straight slices, the LITE does that job for less.

Frequently asked questions
Does it make real waffle fries?
It makes ridged and rippled cuts rather than a deep open lattice. The waffle blade is not wide enough for a full lattice, so expect crinkle-cut texture instead.
What are the 24 settings?
Straight slices from paper-thin to 9 mm, two julienne widths at 4.5 and 9 mm, and the ridged waffle blade, all selected on the side dial.
How do I get the ridged pattern?
Select the waffle setting and rotate the vegetable ninety degrees between passes. Consistent pressure matters more than speed.
How is it different from the PRO?
The PRO is larger, heavier and has a longer blade, but cuts straight and julienne only. The WAFFLE adds the ridged blade and a wider setting range.
Are the gloves really necessary?
Yes. Wear them on both hands, including while cleaning, which is where most mandoline injuries happen. One pair is included.
Is it dishwasher safe?
Yes, top rack. Starch collects in the waffle ridges, so use the included brush if you wash by hand.
How do I store it safely?
Folded, with the blade guard fitted, out of reach of children. Do not leave it loose in a cutlery drawer.
